Butterflied lamb with pumpkin and couscous salad

Grilled butterflied lamb, ideal for summer grilling.
Ingredients:
  • 1.4kg butterflied leg of lamb
  • 10.00 gm sweet paprika
  • 2 tsp cumin seeds
  • 2 cloves garlic, crushed
  • 800g butternut pumpkin, halved, seeded, peeled, thinly sliced
  • 1 red onion, cut into wedges
  • 300g (1 1/2 cups) pearl couscous (see note)
  • 70g (1/2 cup) slivered almonds, toasted
  • 250.00 ml roughly chopped coriander
  • 2.50 gm sweet paprika
  • 1/2 tsp ground turmeric
  • 1.25 gm ground cumin
  • 60ml (1/4 cup) lemon juice
  • 80ml (1/3 cup) olive oil
Instructions:
  • In a large roasting pan, lay the lamb. In a small bowl, mix paprika, cumin seeds, garlic, and 1 tablespoon of olive oil. Spread this flavorful mixture over the lamb, massaging it in with your hands. Cover the pan with plastic wrap and let the lamb marinate in the refrigerator for 1 hour.
  • Preheat a barbecue or chargrill pan to high heat. Brush pumpkin and onion with the remaining tablespoon of oil and season with salt and freshly ground black pepper. Grill for 3 minutes on each side or until tender. Place in a large bowl to serve.
  • Place lamb on the barbecue and sear for 5 minutes on each side. Adjust heat to medium-low, cover, and continue cooking for an additional 10 minutes for medium-rare or until desired doneness. Remove from the heat, transfer to a plate, cover with foil, and let it rest for 15 minutes before serving.
  • Cook couscous in a saucepan of boiling salted water until tender, about 8 minutes. Rinse under cold water, drain well, then add to pumpkin mixture along with almonds and chopped coriander.
  • In a small frying pan over low heat, toast spices for 1 minute until fragrant. Remove from heat, then whisk in juice. Slowly whisk in oil until it's well combined. Season with salt and pepper. Drizzle the dressing over couscous and gently toss to mix.
  • Slice the lamb into thick pieces and arrange it on top of the couscous mixture on a large platter before serving.
