Butterhorn Dinner Rolls

Buttery, light, and slightly sweet classic dinner rolls for special occasions or holidays.
Ingredients:
  • 1 (.25 ounce) package active dry yeast
  • 0.25 cup warm water
  • 0.5 cup unsalted butter
  • 1 cup milk
  • 3 tablespoons white sugar
  • 3.75 cups all-purpose flour, divided
  • 1.5 teaspoons kosher salt
  • 1 large egg yolk
  • 0.25 cup butter, melted
Instructions:
  • Create a foamy yeast mixture by sprinkling yeast over warm water, stirring gently, and letting it sit for 15 to 20 minutes.
  • As the yeast is proofing, combine butter, milk, and white sugar in a saucepan. Cook over medium heat, stirring occasionally, until the butter melts and sugar dissolves, about 3 to 4 minutes.
  • Transfer the mixture to a spacious mixing bowl and allow it to cool until it is pleasantly warm to the touch, around 120 degrees F (49 degrees C), for 2 to 3 minutes.
  • Combine 3 cups flour, kosher salt, yeast mixture, and egg in a bowl. Stir gently with a spatula until a thick and wet batter forms. Add remaining 3/4 cup flour gradually, using your fingers to mix until a soft, sticky dough ball forms.
  • Allow the dough to rise until it's nearly doubled in size, approximately 1 hour.
  • Place the dough on a surface dusted with flour and knead it until it becomes smooth and elastic, which should take approximately 5 minutes.
  • Coat the bowl with butter. Return the dough to the bowl, cover, and allow to rise for 30 minutes.
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet lined with a silicone liner like Silpat®.
  • Place the dough on a work surface and shape it into a 1-inch thick circle. Flip it over and press it into a 1/2-inch thick circle, using a rolling pin if necessary. Cut the dough into 12 equal wedges using a pizza cutter.
  • Roll the wedge of dough from the larger end towards the point, gently stretching the ends for the first few inches. Seal by pinching and pressing the point into the dough, then place seam-side down on the baking sheet. Repeat with the remaining dough.
  • Allow the rolls to rest until they slightly expand, for 15 to 20 minutes.
  • Place in the center of the preheated oven and bake until perfectly cooked and lightly golden brown, for 20 to 25 minutes.
  • Take the rolls out of the oven and generously brush them with warm melted butter. Place them on a wire rack to cool for 15 to 20 minutes.
