Delicious rhubarb bread with a sweet cinnamon butter topping, a must-try for using up garden rhubarb!
Ingredients:
  • 1.5 cups brown sugar
  • 0.66666668653488 cup vegetable oil
  • 1 cup buttermilk
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1.5 cups diced rhubarb
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and generously grease a 5x9-inch loaf pan.
  • In a bowl, combine brown sugar, vegetable oil, egg, buttermilk, flour, baking soda, salt, and rhubarb in the specified order. Stir after adding each ingredient until the batter is just combined. Transfer the batter into the prepared pan.
  • Mix white sugar, butter, and cinnamon in a bowl until crumbly, then gently press onto the batter.
  • Bake until a toothpick inserted in the center comes out clean, about 1 hour in the preheated oven.
