Sweet and spicy vegetable soup, can be enjoyed chunky or blended for a creamy texture. Perfect for cozying up on cold days.
Ingredients:
  • 1 tablespoon olive oil
  • 2 cups cubed butternut squash
  • 2 cups cubed turnips
  • 1 cup thinly sliced celery
  • 1 quart chicken stock
  • 1 bay leaf
  • 1 tablespoon honey
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground nutmeg
  • 0.375 teaspoon ground coriander
  • 0.125 teaspoon cayenne pepper
  • 1 pinch salt to taste
Instructions:
  • In a skillet over medium heat, melt the butter with olive oil. Add butternut squash, turnips, celery, onion, and garlic. Cook until vegetables slightly brown, about 10 minutes. While cooking, simmer chicken stock in a large pot over medium heat.
  • Add the vegetables to the simmering stock along with the bay leaf, honey, pepper, nutmeg, coriander, cayenne pepper, and salt. Simmer until the veggies are soft, approximately 20 minutes. Remember to remove the bay leaf before serving.
