Quick and easy vegetarian curry with butternut squash, chickpeas, tomatoes, red curry paste, and Greek yogurt - perfect for weeknight dinners.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 1 medium butternut squash - peeled, seeded, and cubed
  • 1 medium red onion, diced
  • 2 tablespoons red curry paste
  • 1.25 cups vegetable broth
  • 4 medium tomatoes, chopped
  • 1 (15 ounce) can chickpeas, drained
  • 3 tablespoons Greek yogurt
  • 0.5 tablespoon ground coriander
Instructions:
  • In a pot over medium heat, warm oil. Add squash and stir for 3 minutes. Mix in onion and curry paste; stir and cook for 4 minutes. Pour in vegetable broth, cover, and simmer until squash is tender, approximately 20 minutes.
  • Combine tomatoes, chickpeas, salt, and pepper in the pot and heat through for about 4 minutes. Finish by stirring in Greek yogurt and coriander.
