Quick and creamy butternut squash soup with potatoes, carrots, celery, and onion is ready in just 1 hour.
Ingredients:
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 medium carrot, chopped
  • 2 medium potatoes, cubed
  • 1 medium butternut squash - peeled, seeded, and cubed
  • 1 (32 fluid ounce) container chicken stock
  • salt and freshly ground black pepper to taste
Instructions:
  • Prepare all your delicious ingredients.
  • In a large pot over medium heat, melt butter and sauté onion, celery, carrot, potatoes, and squash until golden, about 5 minutes. Add chicken stock to cover vegetables.
  • Bring the mixture to a gentle boil over medium-high heat, then lower the heat, cover the pot, and let it simmer until the vegetables are tender, about 40 minutes.
  • Blend the soup until smooth, then pour it back into the pot and stir in the remaining stock until it reaches your preferred consistency. Season with salt and pepper to taste.
  • Enjoy while the dish is still steaming hot!
