Warm and comforting butternut squash and carrot soup with a hint of sweetness from honey, a kick of warmth from ginger, and a touch of spice from curry powder. Perfect for a cozy meal anytime.
Ingredients:
  • 4 shallots, diced
  • 1 cup diced carrots
  • 2 tablespoons chopped garlic
  • 2 tablespoons chopped fresh ginger
  • 2 pounds cubed butternut squash
  • 4 cups chicken broth
  • 3 tablespoons curry powder
  • 3 tablespoons honey
  • 0.5 teaspoon ground white pepper
  • 0.25 teaspoon cayenne pepper
Instructions:
  • In a large pot over medium heat, saute shallots, carrots, garlic, and ginger in olive oil until shallots are soft, about 5 to 10 minutes. Add squash, chicken broth, curry powder, honey, white pepper, and cayenne pepper. Bring to a boil, then reduce heat, cover, and simmer until squash is soft, approximately 15 minutes.
  • Blend soup until silky smooth using an immersion blender. Simmer for an additional 3 minutes.
