Butterscotch sauce with burnt-butter bananas and ice-cream

Indulge in a sweet and comforting butterscotch sauce made from butter and sugar, a magical love story that envelops you in warmth.
Ingredients:
  • 110g brown sugar
  • 150g unsalted butter, chopped
  • 125ml cream
  • 4 firm, ripe bananas
  • Juice of 1/2 lemon
  • 8 small scoops vanilla ice cream
  • 75g peanuts
Instructions:
  • Chill 4 dessert bowls in the freezer.
  • In a saucepan over medium heat, melt together sugar and 100g of butter, stirring for 2-3 minutes until the sugar dissolves. Slowly pour in cream while whisking constantly (be cautious of splattering), then cook for another minute until smooth. Remove from heat, add 1 tsp salt flakes, stir to dissolve, and set aside to keep warm.
  • Melt 25g of butter in a frypan over medium heat until it starts to foam. Peel and slice 2 bananas lengthways. Add half of the lemon juice and banana slices to the pan. Cook for 1-2 minutes on each side until the bananas are soft and lightly golden, yet still firm. Set aside to keep warm. Repeat the process with the rest of the butter, lemon juice, and bananas.
  • Take the chilled bowls out of the freezer and scoop 2 portions of ice cream into each. Place 2 slices of banana in each bowl, then drizzle with warm butterscotch sauce and sprinkle chopped peanuts for a delightful presentation.
