Buzzard's Bay Bourbon Scallops

Butter and bourbon sautéed scallops topped with a flavorful bourbon sauce - a surefire crowd-pleaser!
Ingredients:
  • 0.5 cup butter, divided
  • 4 fluid ounces bourbon whiskey, divided
  • 1 tablespoon olive oil
  • 2 pounds sea scallops, rinsed and patted dry
  • 1 tablespoon brown sugar
  • 0.5 teaspoon cayenne pepper
  • salt and ground black pepper to taste
Instructions:
  • Combine butter, bourbon, and olive oil in a large skillet over medium-high heat until melted. Sear sea scallops in the mixture until browned and nearly cooked through, about 2-3 minutes per side. Remove scallops to a plate and drain any extra liquid from the skillet.
  • Combine the remaining butter, bourbon, brown sugar, cayenne pepper, salt, and black pepper in the same skillet over medium-high heat. Cook until the sauce reduces and the alcohol evaporates, about 1 to 3 minutes. Pour the sauce over the scallops.
