Fresh strawberry cake made from scratch with real strawberries and strawberry extract, ideal for spring and summer gatherings.
Ingredients:
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 cup unsalted butter
  • 4 eggs
  • 2 teaspoons strawberry extract
  • 0.5 cup pureed fresh strawberries
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Line the bases of an 8-inch and a 9-inch springform pan with parchment paper, or grease and lightly flour them.
  • Combine flour, baking powder, and salt in a spacious measuring cup.
  • Cream together butter, sugar, eggs, strawberry extract, and vanilla extract in a large mixing bowl until smooth.
  • Gradually add flour mixture and milk into butter mixture, stirring until you have a smooth batter. Mix in the strawberry puree.
  • Gently transfer the batter into the greased springform pans.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 45-55 minutes.
