Indulgent Cadbury Creme Egg-stuffed brownie cookies made effortlessly with store-bought mix. Easy, fudgy, and sure to impress!
Ingredients:
  • 10 full-size milk chocolate creme eggs (such as Cadbury)
  • 1 (18.75 ounce) package fudge brownie mix (such as Ghirardelli Chocolate Supreme), including chocolate syrup packet
  • 1/2 cup (about 2 1/8 ounces) all-purpose flour
  • 6 tablespoons (3 ounces) unsalted butter, melted and cooled
  • 1 large egg, beaten
  • 1 teaspoon instant espresso powder (optional)
  • 1 cup (6 ounces) chocolate chips (dark, milk, or white)
Instructions:
  • Collect all your ingredients. Freeze the creme eggs until they are solid, for a minimum of 2 hours or up to 12 hours.
  • Preheat your oven to 375 degrees F (190 degrees C) and position the rack in the top third. Line two large baking sheets with parchment paper and set them aside.
  • Combine the brownie mix, chocolate syrup packet, flour, butter, egg, and espresso powder (if using) in a large bowl until a stiff dough forms resembling Play-Doh. Gently mix in the chocolate chips until just combined.
  • Take the frozen creme eggs out of their wrappers and keep them aside. Divide the cookie dough into 10 equal parts (each about 3 oz; around 1/4 cup packed dough). Take one portion at a time and flatten it in your hand to make a round shape. Put a frozen creme egg in the middle of the dough round and wrap the dough around it completely. Put the wrapped egg on a baking sheet. Repeat this process for the rest of the creme eggs and dough portions, making sure to place the cookie dough balls at least 2 inches apart on each baking sheet (5 per sheet).
  • Bake one baking sheet of cookies at a time in a preheated oven for 10 to 11 minutes until just set on the edges and top. Be careful not to overbake to avoid the creme eggs seeping out. Allow them to cool slightly on the baking sheet for about 15 minutes. Enjoy warm or transfer to a wire rack to cool completely before storing in an airtight container for up to 2 days.
