Caesar salad with pancetta recipe

Elevate the classic salad with a dazzling homemade Caesar dressing that will wow everyone.
Ingredients:
  • 1/2 Sourdough Baguette*, cut into 5mm-thick slices
  • 40.00 ml finely grated parmesan
  • 8 slices pancetta
  • 2.50 gm ground cumin
  • 140g yoghurt
  • 75g mayonnaise
  • 48.00 gm tahini
  • 1 lemon, zested, juiced
  • 4 baby cos lettuce, cut into wedges
  • 300g mixed medley tomatoes, halved
  • 40g parmesan
Instructions:
  • Prepare a baking tray with a sheet of baking paper. Preheat a barbecue grill or chargrill to medium heat. Lightly coat baguette slices with olive oil spray. Grill for 1-2 minutes on each side until golden brown. Place the slices on the prepared tray and sprinkle generously with grated parmesan cheese. Allow it to cool slightly before serving.
  • Grill pancetta until perfectly crisp on each side, approximately 1-2 minutes. Allow to cool down before further use.
  • In a small frying pan over high heat, toast the cumin seeds for 30 seconds until fragrant. Transfer them to a bowl and whisk in the yogurt, mayonnaise, tahini, and lemon juice until well combined. Season to taste.
  • Lay out cos lettuce, baguette slices, pancetta, tomato, and shaved parmesan on a platter. Top with yoghurt mixture, then sprinkle with lemon zest.
