Spicy beef and potato soup ready in 1 hour - a hearty and delicious dinner!
Ingredients:
  • 1 lb boneless beef sirloin steak (about 1/2 inch thick), cut into 1-inch cubes
  • Cooking spray
  • 1 container (8 oz) refrigerated prechopped onion
  • 3 cups water
  • 2 cans (14.5 oz each) diced tomatoes with green chiles, undrained
  • 1 teaspoon ground cumin
  • 3 cups cubed (1/2 inch) unpeeled Yukon Gold or red potatoes
  • 1/4 cup chopped fresh cilantro, if desired
Instructions:
  • Prepare a 5-quart Dutch oven by coating it with cooking spray and heating it over high heat. Coat the beef with cooking spray and add it to the Dutch oven. Cook for 3 minutes, stirring regularly. Then, add the onion and continue cooking for 5 more minutes, stirring frequently, until the liquid has evaporated and the beef and onion are nicely browned.
  • Combine water, tomatoes, and cumin in a pot. Bring to a boil, then reduce to medium heat. Cover and simmer for 20 minutes. Add potatoes and simmer for an additional 10 minutes until tender. Remove from heat and stir in cilantro before serving.
