Caldo Verde (Portuguese Green Soup)

Creamy Portuguese soup with linguiça sausage, potatoes, and kale.
Ingredients:
  • 4 tablespoons olive oil, divided
  • 1 medium onion, minced
  • 1 clove garlic, minced
  • 6 medium potatoes, peeled and thinly sliced
  • 2 quarts cold water
  • 6 ounces linguiça sausage, thinly sliced
  • 2.5 teaspoons kosher salt
  • ground black pepper to taste
  • 1 pound kale, rinsed and julienned
Instructions:
  • In a large saucepan over medium heat, warm up 3 tablespoons of oil. Sauté onion and garlic for 3 minutes. Add potatoes and stir constantly for 3 minutes. Next, pour in water and bring to a gentle boil. Let it simmer until the potatoes are very tender, approximately 20 minutes.
  • Cook the sausage in a large skillet over medium-low heat until it releases most of its fat, about 10 minutes. Drain the excess fat.
  • Blend potato mixture until smooth using an immersion blender. Mix in sausage and season generously with salt and pepper. Raise heat to medium, cover, and let simmer for 5 minutes.
  • Add the kale and simmer until it is tender and vibrant green, which should take approximately 5 minutes. Stir in the remaining tablespoon of olive oil and serve right away.
