Honey garlic stir-fry: Tender chicken and veggies tossed in a savory-sweet sauce, ready in minutes for a flavorful weeknight meal.
Ingredients:
  • 1 (900 ml) carton CAMPBELL'S® 30% Less Sodium Ready To Use Roasted Garlic Chicken Broth, divided
  • 0.25 cup long grain white rice
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon canola oil
  • 1 large chicken breast, thinly sliced
  • 2 cups broccoli florets
  • 1 medium carrot, sliced
  • 1 medium red onion, chopped
Instructions:
  • In a medium pot, mix 2 1/2 cups (625 mL) broth with rice. Simmer, cover, and cook for 15 to 20 minutes until the broth is absorbed. Fluff with a fork, cover, and keep warm.
  • Combine the remaining broth, honey, soy sauce, and cornstarch in a small bowl, whisk until smooth, and set aside.
  • Heat oil in a large non-stick skillet over medium-high heat. Saute chicken until no longer pink, then add broccoli, carrot, and red onion. Stir-fry until tender.
  • Whisk the broth mixture before adding it to the skillet and bring it to a simmer. Cook for 1 to 2 minutes, stirring often, until the sauce thickens. Serve over cooked white rice.
