Skillet fried rice cooks in one pot, no need to pre-cook rice. Ready in under 30 minutes, with rice soaking up all the tasty sauce.
Ingredients:
  • 1 tablespoon sesame oil
  • 1 pound skinless, boneless chicken thighs, cubed
  • 2 green onions, finely chopped, light and dark green parts divided
  • 4 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 1 (900 ml) carton CAMPBELL’S® 30% Less Sodium Ready to Use Chicken Broth
  • 2 cups long grain white rice
  • 1 cup small broccoli florets
  • 1 cup frozen peas
Instructions:
  • In a large non-stick skillet over medium-high heat, heat oil. Stir-fry chicken until browned, about 6 minutes. Add onions, garlic, and ginger light parts and stir-fry for 1 more minute.
  • Pour in the broth and add the rice. Cover tightly. Simmer over medium-low heat for 15 minutes until rice is tender and liquid is absorbed. Add broccoli and peas in the last 3 minutes of cooking. Remove from heat.
  • Cover and let sit for 2 minutes. Uncover, fluff with a fork, and sprinkle with chopped green onions.
