Delicious customizable taco rice skillet for the whole family to enjoy - quick, easy, and perfect for taco lovers!
Ingredients:
  • 1 pound lean ground beef
  • 1 red pepper, cut into chunks
  • 1 green pepper, cut into chunks
  • 1 (10 ounce) can CAMPBELL'S® Condensed Roasted Red Pepper & Tomato Soup
  • 1.75 cups water
  • 1 tablespoon chili powder
  • 2 teaspoons onion powder
  • 1.5 cups dry instant white rice
  • 1 cup frozen corn
  • 0.5 cup shredded Tex-Mex cheese blend
Instructions:
  • Preheat a large non-stick skillet over medium-high heat. Add the meat to the skillet, along with the red and green peppers. Cook for about 8 minutes, stirring regularly, until the meat is fully cooked. Remove any excess fat from the skillet before proceeding.
  • Combine the soup, water, chili powder, and onion powder in a pot and stir well. Allow the mixture to come to a boil.
  • Add rice and corn to the mixture, cover the pot, and let it simmer over low heat for 5 minutes or until the rice is tender. Sprinkle with cheese, cover the pot, and remove from heat. Allow it to rest for 5 minutes until the liquid is absorbed and the cheese is melted.
