Campfire s'mores

Indoor campfire s'mores for a taste of the great outdoors - no camping required!
Ingredients:
  • 190g packet choc chip cookie thins
  • 12 vanilla marshmallows
  • 24 pretzel sticks
  • 24 mini vanilla marshmallows
  • 75.00 gm Nutella
  • 2 x 30g Flake bars (see notes)
  • 250g unsalted butter, softened
  • 450.00 gm icing sugar mixture
  • 20.60 gm milk
  • Yellow and red gel food colouring (see notes)
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line a baking tray with baking paper. Arrange half of the cookies flat-side up on the tray and place one marshmallow on top of each. Bake for 5 minutes until marshmallows are puffed. Remove from oven and promptly sandwich each marshmallow with another cookie, flat-side down, gently pressing to hold them together. Let's move on to preparing the pretzel sticks. Cut 6 pretzel sticks in half and skewer 2 mini marshmallows onto each cut end. Set aside for later.
  • Make Buttercream: Beat butter with an electric mixer for 5 minutes until pale and fluffy. Gradually add the icing sugar mixture while beating constantly until combined. Mix in the milk. Divide the icing into 3 portions and tint one portion yellow, one portion orange, and one portion red using food coloring. Transfer each colored icing into separate snap-lock bags and cut off 1.5cm from 1 corner of each bag.
  • Lay a 30cm long piece of plastic wrap on a flat surface. Pipe both icings in a straight line down the middle of the plastic wrap. Roll the plastic wrap around the icings, twist the ends, trim one end to expose the icing. Insert into a piping bag with a 1cm-fluted nozzle, cut-end first.
  • Top each cookie with a dollop of Nutella. Break Flake bars into small pieces and place on top of Nutella. Pipe on icing to create flames, refilling piping bag as necessary. Cut remaining pretzel sticks into 5cm pieces and arrange 3 around the flames. Serve with marshmallow skewers for a fun treat.
