Delicious Brazilian pudding for winter festivals in June.
Ingredients:
  • 8 cups water
  • 1 pound dried hominy
  • 2 (14 ounce) cans coconut milk
  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups milk
  • 2 tablespoons white sugar, or to taste
  • 3 (2 inch) sticks cinnamon sticks
  • 0.5 teaspoon ground cinnamon, plus more for garnish
  • 8 whole cloves
  • 1.75 cups freshly grated coconut
Instructions:
  • In a large saucepan, combine hominy and water, and let soak for 8 hours to overnight.
  • The following day, bring the soaked hominy and liquid to a vigorous boil, then lower the heat and let it simmer until the hominy is tender, approximately 1 hour. Stir in coconut milk, condensed milk, regular milk, 2 tablespoons of sugar, cinnamon sticks, 1/2 teaspoon of ground cinnamon, and cloves. Simmer over low heat until the mixture thickens, which should take around 15 minutes.
  • Taste and adjust sweetness as desired with additional sugar. Mix in coconut. Serve in bowls and sprinkle with cinnamon before serving.
