Impress guests with vibrant cannoli cream finale.
Ingredients:
  • 2 x 250g punnets strawberries, sliced
  • 60ml amaretto
  • 250ml thickened cream
  • 50g icing sugar
  • 240g ricotta
  • 2.50 gm ground cinnamon
  • 35g pistachio
  • 50g glace orange, chopped
  • 12 (about 120g) amaretti biscuits (see note), crushed
  • 40.00 ml grated dark chocolate, to serve
Instructions:
  • Combine the strawberries and amaretto in a bowl, and let them soak for 10 minutes to enhance their flavors.
  • In a bowl, whip the cream and icing sugar until soft peaks form. Gently mix in the ricotta, followed by the cinnamon, pistachios, and glacé orange.
  • In each of 6 serving glasses, generously spoon a layer of crushed biscuits, followed by a layer of berries and ricotta cream. Repeat this process, then finish by sprinkling with chocolate before serving.
