Cantonese-style crispy fish

Quick and easy Cantonese fish dish with crispy texture, served with fragrant jasmine rice and steamed Asian greens. Ready in just 20 minutes!
Ingredients:
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1 long red chilli, thinly sliced diagonally (optional)
  • 1 garlic clove, thinly sliced
  • 40.00 ml Chinese rice wine or dry sherry
  • 42.00 gm soy sauce
  • 1 tsp sesame oil
  • 1.25 gm caster sugar
  • 18.20 gm peanut oil
  • 4 (about 200g each) white fish fillets (such as basa or pink ling)
  • Steamed Asian greens, to serve
  • 4 spring onions, cut into matchsticks
  • 250.00 ml coriander leaves
  • Steamed jasmine rice, to serve
Instructions:
  • Mix together ginger, chili (if desired), garlic, rice wine or sherry, soy sauce, sesame oil, and sugar in a small bowl.
  • In a sizzling hot frying pan, with shimmering peanut oil, sear the fish for 3 minutes on each side until beautifully golden and fully cooked.
  • Plate the fish alongside the steamed Asian greens, then drizzle the ginger mixture on top. Garnish with spring onion and coriander, and serve with rice.
