Colorful seasonal caponata featuring vibrant capsicum.
Ingredients:
  • 60ml olive oil
  • 2 onions, finely sliced
  • 6 capsicum (2 each of red, yellow and green), roasted, skins and seeds removed, sliced
Instructions:
  • In a frypan, gently heat oil over low heat. Add onion, garlic, and capsicum. Cook for 20 minutes, stirring occasionally. Serve at room temperature.
