Decadent chocolate and coffee fusion in single serve desserts - Simply stunning!
Ingredients:
  • 1 1/2 cups sugar
  • 2 cups half-and-half
  • 1 tablespoon instant espresso coffee granules
  • 1 teaspoon vanilla
  • 2 whole eggs
  • 6 egg yolks
  • 3 oz bittersweet baking chocolate
Instructions:
  • Preheat the oven to 350°F. In a large bowl, whisk all ingredients (except chocolate) until smooth.
  • Divide the mixture evenly among 8 ungreased 6-ounce ramekins. Arrange the ramekins in a shallow roasting pan and pour hot water into the pan until it reaches halfway up the sides of the ramekins.
  • Bake for 30 to 35 minutes until just set. Remove the ramekins to a cooling rack and let cool for 30 minutes. In a small microwavable bowl, microwave the chocolate uncovered on High for 30 to 40 seconds, stirring every 15 seconds until melted and smooth.
  • Drizzle each custard with a generous 2 teaspoons of melted chocolate, ensuring a smooth and even layer. Chill in the refrigerator for at least 1 hour or until perfectly cold.
