Decadent coffee-infused jelly for grown-ups.
Ingredients:
  • 500ml coffee
  • 110g white sugar
  • 9.00 gm gelatine powder
  • 80ml thickened cream
  • 12.00 gm icing sugar
  • Cocoa, to serve
Instructions:
  • Combine coffee and sugar in a heatproof bowl. Sprinkle gelatine over the mixture and whisk until completely dissolved. Divide the mixture into 4 cappuccino cups. Cover and refrigerate for 4 hours until set.
  • Combine cream and icing sugar until smooth, then dollop on top of coffee jellies and finish with a dusting of cocoa powder for a delightful finish.
