Delicious Italian-inspired lunch: Easy crumpet pizzas topped with artichoke, mushrooms, and ham.
Ingredients:
8Golden Crumpets
69.38 gm tomato paste
230g jar marinated artichoke hearts, drained, sliced
8button mushrooms, sliced
8slicesDon Ham Thinly Sliced Leg Ham, torn
8cherry bocconcini, sliced
12pitted kalamata olives, halved
1/2 tsp dried oregano
Instructions:
Preheat oven to 240C (220C fan-forced) with a large oven tray inside.
Lay out the crumpets and generously spread them with tomato paste. Top with artichokes, mushrooms, ham, cheese, and olives. Sprinkle with oregano and season with pepper to taste.
Place the crumpets onto the hot tray with precision. Bake until the cheese has melted and turns golden, about 10 minutes.
