Delicious Italian-inspired lunch: Easy crumpet pizzas topped with artichoke, mushrooms, and ham.
Ingredients:
  • 8 Golden Crumpets
  • 69.38 gm tomato paste
  • 230g jar marinated artichoke hearts, drained, sliced
  • 8 button mushrooms, sliced
  • 8 slices Don Ham Thinly Sliced Leg Ham, torn
  • 8 cherry bocconcini, sliced
  • 12 pitted kalamata olives, halved
  • 1/2 tsp dried oregano
Instructions:
  • Preheat oven to 240C (220C fan-forced) with a large oven tray inside.
  • Lay out the crumpets and generously spread them with tomato paste. Top with artichokes, mushrooms, ham, cheese, and olives. Sprinkle with oregano and season with pepper to taste.
  • Place the crumpets onto the hot tray with precision. Bake until the cheese has melted and turns golden, about 10 minutes.
