Beer-battered shrimp coated in Cap'N Crunch® cereal, deep-fried to crispy perfection - a fun and quick kid-approved appetizer.
Ingredients:
  • 0.66666668653488 cup beer
  • 0.5 cup masa flour
  • 2 tablespoons white sugar
  • 1.5 teaspoons baking powder
  • 1.5 cups sweetened corn-based cereal (such as Cap'N Crunch®), crushed
  • 0.5 cup cornmeal
  • 24 shrimp
  • 3 cups oil for frying
  • 0.5 cup marmalade
  • 2 tablespoons deli-style Dijon mustard
Instructions:
  • Prepare a baking sheet by lining it with waxed paper.
  • Combine beer, masa flour, egg, sugar, and baking powder in a bowl and whisk until you have a smooth beer batter. In two separate shallow bowls, place crushed cereal in one and cornmeal in the other.
  • Coat shrimp in cornmeal, dip in beer batter, and roll in crushed cereal. Place on baking sheet and freeze for 15 minutes.
  • Preheat oil in a deep-fryer or large saucepan to 350°F (175°C).
  • Fry shrimp in hot oil until golden brown, about 2 to 3 minutes per batch. Remove cooked shrimp to a paper towel-lined plate with tongs.
  • Combine the marmalade and mustard in a bowl, stirring until the sauce is smooth. Serve with cooked shrimp for dipping.
