Caramel Apple Mini "Cheesecakes"

Whip up tasty caramel apple pastries with puff pastry and vanilla pudding.
Ingredients:
  • 1 (10 ounce) package frozen puff pastry shells
  • 4 ounces PHILADELPHIA Neufchatel Cheese, softened
  • 1 cup milk, divided
  • 1 (3.4 ounce) package JELL-O Vanilla Flavor Instant Pudding
  • 1 Granny Smith or Red Delicious apple, chopped
  • 3 tablespoons caramel ice cream topping
Instructions:
  • Preheat the oven to 425 degrees F.
  • Follow the baking instructions on the pastry shells package, then allow them to cool.
  • In the meantime, whisk Neufchatel and 1/4 cup milk together using a mixer until smooth. Mix in the dry pudding mix and the rest of the milk, then beat for 2 minutes. Chill in the refrigerator until needed.
  • Hollow out the center of each pastry shell, discarding the removed pastry. Fill the shells with pudding mixture, then top with apples and caramel. Serve with the pastry tops on the side.
