Caramel Apple Oatmeal

Kid-friendly breakfast: Creamy cinnamon oatmeal topped with caramel apples, raisins, and almonds for a quick and delicious start to the day.
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 medium Golden Delicious apple - peeled, cored, and chopped
  • 0.75 cup brown sugar, divided
  • 0.25 cup unsalted butter
  • 2 cups heavy cream, or more as needed
  • 2 cups oats (such as Quaker Oats®)
  • 1 tablespoon flax seeds
  • 1 tablespoon ground cinnamon
  • 1 cup raisins
  • 0.5 cup sliced almonds
  • 0.25 cup whipped topping
Instructions:
  • In a saucepan over medium heat, melt 1 tablespoon of butter until it sizzles. Toss in the apple and sprinkle 1/4 cup of brown sugar. Keep stirring until the mixture turns beautifully golden brown, which should take about 2 minutes. Serve in a small, inviting bowl.
  • In a small pot over medium heat, melt the rest of the butter. Stir in the remaining brown sugar until fully dissolved. Pour in 2 cups of heavy cream and bring to a simmer. Add oats, flax seeds, and cinnamon, stirring constantly until the oats are fully cooked and creamy, about 2 minutes. Add a splash more heavy cream if necessary.
  • Garnish with caramel apple, raisins, and almonds in a bowl. Drizzle with a dollop of whipped topping for extra creaminess.
