Caramel drizzle churro cake recipe

Indulge guilt-free in this baked churro cake with layers of creamy caramel goodness.
Ingredients:
  • 120g unsalted butter, chopped
  • 1.20 gm salt
  • 150g (1 cup) plain flour
  • 4 eggs
  • 750ml (3 cups) thickened cream
  • 5.00 gm ground cinnamon
  • 310ml (1 1/4 cup) caramel spread
  • 155g (3/4 cup) caster sugar
  • 7.50 gm ground cinnamon
Instructions:
  • Preheat the oven to 180°C/160°C fan forced. In a saucepan over medium heat, bring 1 cup (250ml) water, butter, sugar, and salt to a boil while stirring constantly. Add flour and stir until the dough comes away from the sides of the pan, about 1 minute. Remove from heat and let it cool slightly for 10 minutes.
  • Transfer the dough to a large bowl. Beat the eggs one at a time into the dough using electric beaters, ensuring thorough mixing after each addition. Spoon the mixture into a large piping bag equipped with a 1.5cm fluted nozzle.
  • In a small bowl, mix together the sugar and cinnamon to create the cinnamon sugar.
  • Prepare 3 large baking trays with baking paper. Using a 15cm plate, trace and draw 5 circles on the paper. Place the paper ink-side down. Pipe a ring of churro dough around the edge of each circle. Add more rings of dough inside the larger one, leaving a small gap between each, until the circle is filled. Sprinkle each with 1 tbsp of cinnamon sugar. Repeat process with the rest of the churro dough and cinnamon sugar to create a total of 5 cakes.
  • Bake the churro discs for 35 minutes or until golden brown. Flip over and bake for another 30 minutes until golden and cooked through. Lightly spray with oil and sprinkle each with 1 tablespoon of cinnamon sugar. Allow to cool completely.
  • Whip the cream and cinnamon with electric beaters in a bowl until it forms firm peaks. Place one churro disc on a serving plate. Add one-fifth of the cinnamon cream and drizzle with 60ml (1/4 cup) caramel. Repeat with the rest of the churro discs, cinnamon cream, and caramel. Best served on the same day.
