Indulgent caramel, cream cheese, and light chocolate whipped filling make this pie a chocolate lover's dream.
Ingredients:
  • Easy Nut Crust
  • 30 caramels (from 14-oz bag), unwrapped
  • 2 tablespoons water
  • 1/2 cup chopped pecans, toasted*
  • 2 packages (3 oz each) cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 package (4 oz) sweet baking chocolate, chopped
  • 3 tablespoons hot water
  • 1 teaspoon vanilla
  • 2 cups whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate curls, if desired
Instructions:
  • Preheat your oven to 450°F. Prepare and bake the crust according to the instructions. Allow it to cool completely on a cooling rack.
  • In a 2-quart saucepan, melt caramels, butter, and 2 tablespoons water over medium heat, stirring often until smooth. Pour the mixture into the cooled baked crust, sprinkle with pecans, then chill in the refrigerator for about 1 hour until set.
  • In a small bowl, use a spoon to whip together the cream cheese and 1/3 cup of powdered sugar until velvety. Spread this luscious mixture over the caramel layer and chill in the refrigerator.
  • In a 1-quart saucepan, gently melt the chocolate and 3 tablespoons of hot water over low heat, stirring constantly. Let it cool to room temperature, then mix in the vanilla.
  • In a chilled large bowl, whip together whipping cream and 2 tablespoons of powdered sugar with an electric mixer on low speed until it starts to thicken. Then, increase the speed to high and continue beating until stiff peaks form. Set aside 1 1/2 cups for later use.
  • Gently combine chocolate mixture with the rest of the whipped cream. Spread over the cream cheese layer, then top with reserved whipped cream and chocolate curls. Chill for at least 1 hour, but no more than 48 hours, until set. Enjoy!
