Elevate classic damper with caramelised onion, sharp cheddar, and aromatic thyme for a mouthwatering twist. Fire up the grill for a crowd-pleasing treat!
Ingredients:
  • 25g butter, chopped
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 tsp chopped fresh thyme leaves
  • 8.00 gm brown sugar
  • 2 tsp balsamic vinegar
  • 450.00 gm self-raising flour
  • 4.80 gm salt
  • 250.00 ml grated vintage cheddar
  • 3 eggs, lightly beaten
  • 193.13 gm milk, plus extra for brushing
  • 50g butter, extra, melted, cooled
  • Butter, to serve
Instructions:
  • In a large frying pan over medium heat, melt butter with oil, then add onion and thyme. Cook for 15 minutes until onion is soft. Stir in sugar and vinegar and cook for 5 to 8 minutes until caramelized. Let it cool completely.
  • Preheat your oven to 190C/170C fan-forced and prepare a large baking tray by greasing and lining it with baking paper.
  • In a large bowl, mix together flour, salt, and 1/2 cup of cheddar. Season with pepper and make a well in the center. Add egg, milk, and melted butter. Stir until well combined, then gently knead in the onion mixture.
  • Take the mixture and form it into 12 evenly sized balls. Space them about 3cm apart on the tray. Brush with a bit of extra milk and sprinkle with the remaining cheddar. Bake for 35 to 40 minutes until golden and hollow-sounding. Let them cool on the tray, then enjoy warm or at room temperature with butter.
