Delicious peach and raspberry almond shortcakes topped with whipped cream - perfect for home or picnics!
Ingredients:
  • 3 tablespoons butter or margarine
  • 1/4 cup packed brown sugar
  • 2 tablespoons amaretto
  • 2 medium peaches, peeled, cut up
  • 1 cup raspberries
  • 6 sponge shortcake cups
  • Sliced almonds, if desired
  • 1 cup whipping cream
  • 2 tablespoons packed brown sugar
  • 1 teaspoon amaretto
Instructions:
  • Melt butter in a 10-inch skillet over medium-low heat. Add brown sugar and cook for 2 minutes, stirring constantly. Stir in amaretto and peaches, cook for 3 to 4 minutes until the peaches are coated. Let it cool for 10 minutes before gently folding in the raspberries.
  • Beat the ingredients for Amaretto Whipped Cream in a chilled medium bowl with an electric mixer on high speed until stiff peaks form.
  • Finish off each shortcake cup with a delightful peach-raspberry blend, a dollop of whipped cream, and a sprinkle of almonds for the perfect touch.
