Zesty lemon asparagus salmon bundles baked to perfection in parchment paper with a simple seasoning of salt and pepper. Juicy and flavorful with minimal oven time required.
Ingredients:
  • 4 (4 ounce) salmon fillets
  • 1 lemon, juice only
  • salt and ground black pepper to taste
  • 4 12x18-inch pieces of parchment paper
  • 1 lemon, thinly sliced
  • 0.5 cup green onions, chopped
  • 8 spears fresh asparagus, cut into 1-1/2 inch pieces
  • 4 teaspoons olive oil
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Rinse the salmon fillets under cold water, transfer them to a plate, and give them a zesty squeeze of lemon. Sprinkle salt and black pepper over the fillets.
  • Fold a piece of parchment paper in half crosswise, placing a salmon fillet on one side. Top the salmon with lemon slices, surround with asparagus, and sprinkle green onion over the lemon. Fold the parchment paper over the salmon and seal the edges tightly to create a parchment envelope. Transfer the envelopes onto a baking sheet and brush each packet with olive oil.
  • Roast in the preheated oven until the asparagus is tender and the salmon is perfectly cooked, around 20 to 25 minutes. To serve, transfer the packet onto a plate, and carefully open the paper to unleash the delicious aroma.
