Indulgent baked potato soup loaded with Cheddar cheese, crispy bacon, and creamy sour cream. Satisfying and flavorful.
Ingredients:
  • 4 baking potatoes
  • 0.66666668653488 cup butter
  • 0.66666668653488 cup all-purpose flour
  • 6 cups milk
  • 1 cup chopped green onions
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 12 slices cooked bacon, crumbled
  • 5 ounces shredded Cheddar cheese
  • 1 (8 ounce) container sour cream
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Bake the potatoes in a hot oven for an hour. Scoop out the potato flesh and save. Keep the skins for another recipe or throw them away.
  • In a large skillet over medium-low heat, melt butter. Add flour to create a roux and cook for 1 minute, stirring constantly. Gradually pour in milk, increase heat to medium, and stir until thickened.
  • Combine potatoes, green onions, salt, ground black pepper, bacon, and cheese in the pot. Mix thoroughly and cook for 15 minutes to enhance the flavors. Gently fold in the sour cream until fully incorporated. Serve hot.
