Carol's Butter Pecan Cake

Decadent pecan cake with luscious buttercream frosting.
Ingredients:
  • 1.25 cups butter
  • 2 cups chopped pecans
  • 3 cups sifted all-purpose flour
  • 0.5 teaspoon salt
  • 4 eggs
  • 1 cup milk
  • 0.25 cup butter
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar
  • 0.33333334326744 cup heavy whipping cream
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare three 9-inch layer pans by greasing and flouring them.
  • In a heavy skillet over medium heat, melt 1/4 cup of butter until golden. Stir in pecans and cook until browned, about 10 to 15 minutes. Set aside.
  • Combine and sift flour, baking powder, and a pinch of salt; then set aside.
  • In a large mixing bowl, cream together 1 cup of butter and 2 cups of white sugar until fluffy. Mix in eggs one at a time, ensuring each is well incorporated. Alternate adding the flour mixture with milk and vanilla extract, starting and ending with the dry ingredients. Fold in 1 1/3 cups of pecans before pouring the batter into the prepared pans.
  • Bake the cake in the preheated oven until it turns golden brown and springs back when lightly touched in the center, for about 25 to 30 minutes. Once the cake has cooled, mix the remaining 2/3 cup of pecans with the frosting. Spread this mixture between the layers and on top of the cake.
  • In a mixing bowl, combine 1/4 cup butter, 1 teaspoon vanilla extract, 1/4 teaspoon salt, 4 cups confectioners' sugar, and 1/3 to 1/2 cup cream. Beat until smooth and spreadable, adding more cream as needed for desired consistency.
