Delicious, moist bread with applesauce, raisins and walnuts - a Victorian-inspired Christmas treat that makes a great holiday gift.
Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon ground cloves
  • 1 cup quick cooking oats
  • 0.5 cup butter, melted
  • 0.5 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups applesauce
  • 0.5 cup chopped walnuts
  • 0.5 cup black raisins
Instructions:
  • Preheat your oven to a toasty 350 degrees Fahrenheit (175 degrees Celsius) and give your 8x4 inch loaf pan a gentle greasing.
  • In a large bowl, combine flour, baking soda, baking powder, salt, cinnamon, and cloves, sifting them together. Add oats to the mixture. In a separate mixing bowl, cream together butter, sugar, and vanilla until light and fluffy. Incorporate eggs until well combined. Fold in applesauce, walnuts, and raisins. Gently mix in the flour mixture until just moistened. Pour the batter into a prepared loaf pan.
  • Bake in a preheated oven for about 55 minutes or until a knife inserted in the middle comes out clean. Be mindful not to overbake. Let it cool in the pan for 5 minutes before transferring to a rack to cool completely.
