Baked sea bass fillets with buttery crawfish and crab sauce.
Ingredients:
  • 4 (4 ounce) fillets sea bass
  • kosher salt and ground black pepper to taste
  • 0.5 cup butter
  • 3 tablespoons light olive oil
  • 2 shallots, minced
  • 0.5 teaspoon minced garlic
  • 3 tablespoons all-purpose flour
  • 1 cup half-and-half
  • white pepper to taste
  • 1 (16 ounce) package frozen cooked crawfish tails, thawed
  • 1 (6 ounce) can lump crabmeat
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Season the sea bass generously with a pinch of salt and pepper, then elegantly place it in a baking dish, ready for culinary magic.
  • Combine butter and olive oil in a skillet over medium-low heat until melted. Sauté shallots, garlic, and parsley until softened, about 5 minutes. Stir in flour until smooth. Gradually add half-and-half, stirring until thickened. Season with white pepper. Fold in crawfish tails and crabmeat gently. Spoon over sea bass fillets.
  • Cook the fish in the preheated oven until it easily flakes with a fork, for 15 to 20 minutes. Serve promptly.
