Carrot, Tomato, and Spinach Quinoa Pilaf

Flavorful thyme quinoa pilaf with crisp vegetables, perfect for Passover.
Ingredients:
  • 2 teaspoons olive oil
  • 0.5 onion, chopped
  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons vegetarian chicken-flavored bouillon granules
  • 1 teaspoon thyme
  • 1 carrot, chopped
  • 1 cup baby spinach
Instructions:
  • In a saucepan, sauté onions in olive oil until translucent. Add quinoa and toast for 2 minutes. Stir in water, bouillon, pepper, and thyme. Bring to a boil, then cover and simmer for 5 minutes.
  • Mix in the carrots, cover, and let simmer until all the water is absorbed, approximately 10 minutes. Turn off the heat, then add the tomatoes and spinach. Stir until the spinach wilts and the tomatoes release their moisture, around 2 minutes.
