Carrot and apple salad

Vibrant carrot salad, perfect for picnics.
Ingredients:
  • 100g (1 cup) walnut kernels
  • 6 carrots, cut into matchsticks
  • 1 green apple, peeled, cut into matchsticks
  • 125ml (1/2 cup) fresh lemon juice
  • 65g (1/3 cup) sultanas
  • 28.60 gm honey
Instructions:
  • Preheat your oven to 180°C. Spread walnuts on a baking tray and bake for 5 minutes until toasted. Allow to cool before using.
  • Combine the carrot and apple in a bowl. Drizzle half of the lemon juice and mix well. Fold in the walnuts and sultanas.
  • In a screw-top jar, mix together oil, honey, and the rest of the lemon juice. Season with salt and pepper. Drizzle the dressing over the salad and toss well to mix.
