Cilantro-infused British-inspired soup with minimal ingredients and easy preparation.
Ingredients:
  • 4 large carrots, cut into 1 inch pieces
  • 0.25 large onion, chopped
  • 0.5 cup chopped fresh cilantro
Instructions:
  • In a large saucepan, combine carrots, onion, vegetable broth, and cilantro. Bring to a boil and simmer for about 10 minutes until carrots are tender. Set aside to cool slightly before serving.
  • Blend the soup until velvety. Reheat if needed before serving.
