Delicious carrot cake bliss balls with natural sweetness from dates and fruit, coated in coconut for a healthy and satisfying snack!
Ingredients:
  • 1 large carrot, peeled, coarsely grated
  • 6 fresh dates, pitted, chopped
  • 40g dried pineapple
  • 90g rolled oats
  • 20.00 ml almond spread (optional)
  • 1.25 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • 40g desiccated coconut
Instructions:
  • Combine carrot, date, pineapple, oats, almond spread (if using), cinnamon, and nutmeg in a food processor until mixture is nearly smooth and fully incorporated.
  • Shape the mixture into balls, then roll them in coconut until coated. Chill on a lined tray in the fridge for 1 hour or until firm. Keep them in an airtight container in the fridge for up to 1 week.
