Delicious carrot cake donut holes with cinnamon sugar coating, served with creamy cream cheese frosting dip - an irresistible treat for everyone!
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup brown sugar
  • 1 tablespoon baking powder
  • 1.5 teaspoons ground cinnamon, divided
  • 1 teaspoon baking soda
  • 0.75 teaspoon kosher salt
  • 0.25 teaspoon ground nutmeg
  • 1 cup whole milk
  • 0.5 cup drained crushed pineapple
  • 1 egg
  • 0.25 cup butter, melted
  • 1 cup grated carrots, packed
  • 0.5 cup sweetened flaked coconut
  • vegetable oil for cooking
  • 0.33333334326744 cup white sugar
  • 0.5 cup cream cheese, softened
  • 1 tablespoon butter, softened
  • 1 cup confectioners' sugar
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt
Instructions:
  • Combine flour, brown sugar, baking powder, 1 teaspoon cinnamon, baking soda, and 3/4 teaspoon kosher salt in a large bowl and whisk together until fully incorporated.
  • In a small bowl, mix together milk, crushed pineapple, and egg. Combine with the flour mixture. Stir in melted butter until a soft dough forms, then gently fold in carrots and coconut.
  • In a large pot, heat at least 2 inches of oil to 350 degrees F (175 degrees C. Prepare a wire rack or baking sheet lined with paper towels.
  • Using a small ice cream scoop, delicately drop dollops of dough into the hot oil. Fry donut holes until they turn a beautiful golden brown color on each side, approximately 1 minute per side. Using a slotted spoon, transfer the fried donut holes to paper towels to drain and cool slightly. Repeat this process with the rest of the dough.
  • In a shallow bowl, combine white sugar and the remaining 1/2 teaspoon of cinnamon. Roll donut holes in the sugar mixture.
  • In a bowl, mix cream cheese and 1 tablespoon butter until smooth. Add confectioners' sugar and beat until fluffy. Stir in vanilla extract and a pinch of salt. Serve cream cheese dip with donut holes.
