Indulgent carrot cake trifle layered with fluffy cake, creamy pudding, crunchy almonds, sweet coconut, and rich toffee bits - a delightful twist on a classic favorite.
Ingredients:
  • 1 (15.25 ounce) package carrot cake mix
  • 1 cup water
  • 0.66666668653488 cup vegetable oil
  • 3 large eggs
  • 1 cup chopped almonds
  • 1 cup shredded coconut
  • 1 cup toffee baking bits (such as Heath®)
  • 2.5 cups milk
  • 1 (5 ounce) package instant vanilla pudding mix
  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Prepare a delicious cake by combining cake mix, water, oil, and eggs in a bowl. Use an electric mixer on low for 30 seconds, then switch to medium speed until the batter is well mixed. Remember to scrape the sides of the bowl. Transfer the batter to the baking dish.
  • Bake in the preheated oven for 31 to 36 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven, keeping the oven on.
  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely for another 20 minutes.
  • While the cake cools, prepare the topping by spreading almonds and coconut on a baking sheet.
  • Toast in the oven until golden and aromatic, for 5 to 10 minutes. Take out of the oven and allow the cake to cool down.
  • Prepare the filling: In a bowl, use an electric mixer to blend milk and pudding mix until combined and starting to thicken. Add cream cheese and mix until smooth, then gently fold in the whipped topping.
  • Cut the cake into bite-sized pieces and combine the cooled almonds, coconut, and toffee baking bits in a bowl.
  • Start by delicately arranging half of the cake cubes at the base of your trifle dish or glass bowl. Spoon over half of the luscious filling, followed by half of the irresistible topping. Repeat the layers for a second time to create a masterpiece of flavors and textures.
