Carrot cake with lime icing

Decadent coconut-infused carrot cake.
Ingredients:
  • 225g unsalted butter, softened
  • 220g caster sugar
  • 4 eggs
  • 175g self-raising flour
  • 4.00 gm baking powder
  • 200g carrots, finely grated
  • 50g desiccated coconut
  • Zest and juice of 1 orange
  • 55g flaked coconut, toasted
  • 175g cream cheese
  • 100g (2/3 cup) icing sugar, sifted
  • Zest and juice of 1 lime
Instructions:
  • Preheat your oven to 170°C and prepare a 23cm springform cake pan by greasing and lining the base.
  • In a spacious bowl, cream together the butter and sugar using an electric mixer until pale and fluffy. Incorporate the eggs one by one, ensuring thorough mixing after each addition. Sift in the flour, baking powder, and a pinch of salt, then mix until well combined. Fold in the carrots, desiccated coconut, citrus rind, and enough juice to achieve a dropping consistency. Stir the mixture well and transfer it into a cake pan.
  • Bake for 35-40 minutes until a toothpick inserted in the center comes out clean. Let it cool briefly in the pan before transferring to a rack to cool completely.
  • Prepare the icing by whipping the ingredients until smooth, then generously spread over the cake before decorating with a sprinkle of coconut flakes.
