Citrus-marinated carrot and jicama salad is a refreshing choice.
Ingredients:
  • 2 tablespoons cider vinegar
  • 0.125 teaspoon sea salt
  • 2 carrots, shaved into strips using a vegetable peeler
  • 0.5 jicama, peeled and cut into thin matchsticks
  • 1 orange, peeled and thinly sliced
  • 1 sprig fresh cilantro, or to taste
  • cracked black pepper to taste
  • 2 leaves escarole, torn
Instructions:
  • Combine water, vinegar, and sea salt in a bowl until the salt dissolves. Add shaved carrots, ensuring they are fully submerged in the liquid. Refrigerate for 2 hours to marinate, then drain before using.
  • Arrange a colorful combination of carrots, jicama, orange slices, and cilantro on a plate. Sprinkle with freshly cracked black pepper and top it off with a beautiful escarole garnish before serving.
