Vibrant vegan quinoa stir-fry with bell peppers, carrots, onion, and shallot - a flavorful and speedy weeknight side dish.
Ingredients:
  • 0.25 cup olive oil
  • 5 carrots, shredded
  • 2 red bell peppers, diced
  • 2 green bell peppers, diced
  • 1 shallot, chopped
  • 3 cloves garlic, crushed
  • 4 cups vegetable broth
  • 1 cup quinoa
  • 1 pinch dried basil, or to taste
Instructions:
  • In a large saucepan over medium-high heat, sauté carrots, red bell peppers, green bell peppers, onion, and shallot in olive oil until softened, approximately 5 minutes. Add garlic and continue to cook until fragrant, around 3 minutes.
  • Add the vegetable broth and quinoa to a saucepan, cover, and simmer for approximately 20 minutes until the quinoa is tender. Finally, sprinkle dried basil over the quinoa before serving.
