"Simple microwave cashew brittle ready in 35 minutes, no candy thermometer needed."
Ingredients:
  • 1.5 tablespoons butter, or as needed
  • 2 cups white sugar
  • 1 cup light corn syrup
  • 3 cups unsalted cashews, a mixture of whole and chopped
  • 2 teaspoons butter
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
Instructions:
  • Generously coat a rimmed baking sheet with 1 1/2 tablespoons of butter.
  • In a microwave-safe bowl, combine sugar and corn syrup. Microwave uncovered on high for 4 1/2 minutes. Stir, then microwave for an additional 3 minutes.
  • Combine cashews, 2 teaspoons of butter, and salt in a microwave-safe bowl. Microwave until the mixture turns a light amber color, approximately 1 to 1 minute 40 seconds. Be cautious, as the mixture will be very hot. Promptly fold in baking powder and vanilla extract until well incorporated. Transfer the mixture to the prepared baking sheet right away and smooth it out using a metal spatula.
  • Chill in the refrigerator for a minimum of 20 minutes until firm. Then, break into bite-sized pieces.
