Indulgent cassata: Nuts, glace fruit, and chocolate in rich ice cream.
Ingredients:
  • 1L low-fat vanilla ice-cream
  • 50g (1/3 cup) finely chopped pistachio nuts
  • 10.00 gm cocoa powder
  • 85g (1/3 cup) finely chopped glace fruit (like apricots, pineapple and peaches)
Instructions:
  • Cover the 7.5 x 25cm pan with plastic wrap, ensuring to wet the pan first for the plastic to adhere easily.
  • Split the ice-cream between 2 bowls. Combine the nuts in one bowl and gently stir. Transfer mixture to a lined pan, ensuring a smooth surface.
  • Sprinkle the cocoa powder over the second bowl of ice cream and top with glacé fruit. Mix until fully incorporated; this portion will have a softer texture due to more stirring. Pour over the pistachio mixture and lightly tap the pan on the counter to even it out.
  • Wrap the dish tightly with plastic wrap and let it chill in the freezer overnight.
  • Presentation is key. Flip the dessert onto a cold plate, remove the plastic carefully, and slice into 16 even pieces using a sharp knife. Enjoy promptly.
