Easily craft a stunning layered ice cream dessert with your choice of flavors.
Ingredients:
  • Light oil or oil spray, to grease
  • 500ml pistachio ice-cream*
  • 500ml strawberry ice-cream
  • 1L chocolate ice-cream
Instructions:
  • Coat an 11cm x 25cm terrine with a touch of oil, then line it with plastic wrap for easy removal (the oil helps the wrap adhere smoothly).
  • Take the strawberry ice-cream out of the freezer and let it soften slightly (you can achieve this by microwaving on high for 30 seconds). Spread the ice-cream evenly over the base of the terrine, press down firmly, and smooth the top. Refreeze until firm. Repeat with the pistachio and chocolate layers, refreezing each layer before adding the next. Once all layers are in place, return the terrine to the freezer until completely firm.
  • When you're ready to serve, briefly dip the terrine in warm water. After counting to 40, flip it onto a plate, gently pulling the plastic wrap to release the cassata. Transfer to a platter, slice, and enjoy. Store any leftovers by wrapping them in plastic and freezing them again.
