Classic Filipino cassava cake made with fresh yuca, coconut milk, condensed milk, and egg.
Ingredients:
  • 2 cups grated, peeled yuca
  • 1 (14 ounce) can coconut milk
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 2 large eggs, beaten
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine yuca, coconut milk, condensed milk, evaporated milk, and eggs in a bowl until well mixed. Transfer the mixture to a 2-quart baking dish.
  • Bake in the preheated oven for 1 hour until fully cooked.
  • Preheat the broiler and bake the cake until the top is golden brown, which should take 2 to 3 minutes. Let it cool in the refrigerator for about 1 hour before serving.
